Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place small piles of shredded mozzarella cheese on the parchment paper—about 1 tablespoon per chip.
Top each pile with a slice of pepperoni.
Bake for 8 to 10 minutes, or until the cheese is bubbly and golden around the edges.
Let them cool on the sheet for a few minutes so they crisp up properly.
