Preheat your oven to 350°F (175°C). Grease an 8-inch round or square baking pan.
Peel and grate the apples into a large mixing bowl.
Crack the eggs into the bowl and stir them together with the apples.
Add the self-rising flour and mix until just combined. Don’t overthink it.
Pour the batter into the greased pan and smooth the top a little.
Bake for about 35 to 40 minutes, or until golden on top and a toothpick comes out clean.
Let it cool for a few minutes before slicing. Or not. I won’t judge.
