Preheat oven to 325°F. Line a baking sheet with parchment paper.
In a large bowl, cream together butter and sugar until smooth and fluffy.
Add flour gradually and mix until dough forms. It will look crumbly at first, but keep mixing until it comes together.
Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheet.
Flatten slightly with the bottom of a glass or your palm.
Bake for 12 to 15 minutes, until edges are lightly golden.
Let cookies cool on the sheet for 5 minutes before moving to a rack to cool completely.
