Preheat your oven to 425°F and line a baking sheet with parchment paper.
Pound the chicken breasts to an even thickness using a meat mallet or rolling pin.
In a small bowl, whisk the egg and water together.
In another bowl, combine breadcrumbs, parmesan, garlic powder, onion powder, salt, and pepper.
Dip each chicken piece into the egg wash, then coat it in the breadcrumb mixture.
Place coated chicken on the baking sheet and lightly spray with olive oil.
Bake for 20 minutes, flip the chicken, and bake for another 5–10 minutes until crispy.
Top each piece with marinara sauce and shredded mozzarella. Return to oven for 3–5 minutes until cheese is melted and bubbly.
Garnish with fresh basil if you’re feeling fancy. Serve hot!
