Pat the salmon fillets dry with paper towels and place them skin-side down on the prepared sheet.
In a small bowl, whisk together honey, garlic, soy sauce, olive oil, and lemon juice until combined.
Brush the glaze generously over each salmon fillet, reserving a little for later.
Bake for 12 to 15 minutes, depending on the thickness, until the salmon flakes easily with a fork.
Brush with the reserved glaze during the last 2 minutes of baking for that glossy finish.
Remove from the oven, sprinkle with fresh parsley if using, and serve immediately.
