Ingredients

  • 1 ripe banana, mashed
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium bowl, mash the banana with a fork until mostly smooth.
  2. Stir in the sugar, vanilla extract, and cinnamon.
  3. Add the flour, baking powder, and salt. Mix until just combined.
  4. Stir in the milk to create a thick batter.
  5. Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
  6. Drop heaping spoonfuls of batter into the hot oil, cooking 1–2 minutes per side until golden brown.
  7. Remove fritters and place on a paper towel–lined plate to drain excess oil.
  8. Serve warm with a dusting of powdered sugar or a drizzle of honey, if you like.
