I made these Banana Peanut Butter Oatmeal Bars on a random Tuesday morning when I had three spotty bananas and no plan. Turns out, that was the best decision I made all week. Ingredients

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/2 cup peanut butter (creamy or chunky)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Optional: 1/4 cup mini chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper or grease it lightly.
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in the peanut butter, honey, vanilla, cinnamon, and salt. Mix well.
  4. Add the oats and any optional mix-ins. Stir until fully combined.
  5. Spread the mixture evenly into the prepared pan.
  6. Bake for 25–28 minutes or until the top is golden and set.
  7. Let them cool in the pan before slicing into bars. Store leftovers in an airtight container.
