Ingredients

  • 1 ball of pizza dough (store-bought or homemade)
  • 1/2 cup barbecue sauce (I like something smoky and sweet)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 small red onion, thinly sliced
  • 4 slices bacon, cooked until crispy and chopped
  • Optional: fresh cilantro for topping

Instructions

  1. Preheat your oven to 475°F (245°C). If you’ve got a pizza stone, toss it in there while the oven heats.
  2. Roll out your pizza dough on a lightly floured surface to about 12 inches in diameter. No need to be perfect—rustic edges are charming.
  3. Transfer the dough to a piece of parchment paper or a pizza pan. Spread the barbecue sauce all over the base, leaving a little crust border.
  4. Sprinkle the mozzarella cheese evenly over the sauce. Then scatter on the red onions and bacon like you’re decorating your favorite canvas.
  5. Bake for 12–15 minutes, or until the cheese is bubbly and golden in spots and the crust is nice and crispy.
  6. Let it cool for a few minutes, top with chopped cilantro if using, and slice it up. Serve hot and don’t expect leftovers.
