Beef Dorito Casserole – Easy Recipes with Ground Beef Everyone Will Love

If you’ve ever stared into your pantry and thought, 'What in the snack-loving world can I do with all these Doritos?'—welcome. I’ve been there. One hectic Tuesday night, low on time and even lower on patience, I accidentally created what might be the most comforting, cheesy dish to ever grace a casserole dish: Beef Dorito Casserole. 🧀🥘 It’s one of those easy recipes with ground beef that your family will request again before they’ve finished the first serving. Think savory seasoned beef, creamy filling, and the perfectly crunchy chaos of nacho cheese chips layered like edible confetti. It’s ridiculously simple to throw together and—bonus—it makes leftovers that actually taste better the next day (if there *are* any). 👀 Perfect for busy weeknights, feeding picky eaters, or just impressing yourself with how well you can cook while still wearing pajama pants. So grab that bag of chips you were going to eat straight out of the bag and let’s upgrade snack time to dinner time. 😉

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 (10 oz) can Rotel (diced tomatoes & green chilies)
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (8 oz) sour cream
  • 2 cups shredded cheddar cheese
  • 1 large bag nacho cheese Doritos, crushed slightly

Instructions

  1. Preheat your oven to 350°F. Trust me, do it first—you’ll forget later.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is no longer pink. Drain the grease like a pro.
  3. Add taco seasoning and water. Stir it up and let it simmer for about 5 minutes until thickened.
  4. Turn off the heat, then mix in the Rotel, cream of mushroom soup, and sour cream. Stir until everything looks suspiciously delicious.
  5. In a 9x13 baking dish, sprinkle a generous layer of crushed Doritos (but don’t pulverize them—we want crunch, not dust).
  6. Spread half the beef mixture over the chips. Add a layer of shredded cheese. Repeat: more Doritos, more beef, more cheese.
  7. Bake uncovered for 20-25 minutes, or until bubbly and golden like it’s trying to impress someone.
  8. Let it rest for a few minutes (you’ll be tempted, but the roof of your mouth will thank you). Then dive in!
