Preheat your oven to 375°F. Grab a baking dish large enough to fit your pork chops snugly.
Pat the pork chops dry with paper towels. Rub them with olive oil, salt, pepper, paprika, and thyme.
In a small bowl, whisk together the brown sugar, melted butter, and minced garlic.
Place the pork chops in the baking dish and brush them generously with the sugar-butter mixture.
Bake uncovered for 25–30 minutes, or until the internal temperature hits 145°F. Halfway through, spoon some of that buttery sauce over the chops to keep them juicy.
Remove from the oven and let the pork chops rest for 5 minutes before serving.
