Preheat your oven to 300°F and line a baking sheet with parchment paper.
Separate the eggs, placing the yolks in one bowl and the whites in another.
Whip the egg whites with cream of tartar and a pinch of salt until stiff peaks form.
In another bowl, mix the yolks with cream cheese until smooth.
Fold the egg whites into the yolk mixture gently to keep the fluffiness.
Spoon the mixture onto the baking sheet into rounds and sprinkle with cheddar cheese.
Bake for about 25–30 minutes, until golden and set.
