Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, sliced
  • 1 green bell pepper, sliced
  • 1 pound shaved beef or thinly sliced steak
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (20-ounce) package refrigerated cheese tortellini
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell pepper and sauté until soft, about 5 minutes.
  2. Stir in shaved beef and cook until browned, about 3–4 minutes.
  3. Add garlic, Worcestershire sauce, salt, and pepper. Cook for 1 more minute.
  4. Stir in the beef broth and bring to a simmer. Add the tortellini and cook according to package instructions, usually 4–5 minutes.
  5. Reduce heat to low and stir in the heavy cream. Let it simmer for 2 minutes.
  6. Add shredded provolone and stir until melted and creamy.
  7. Garnish with chopped parsley and serve hot.
