Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked pasta (penne or fusilli work great)
  • 1 medium sweet potato, peeled and diced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Olive oil, for roasting

Instructions

  1. Preheat your oven to 400°F. Toss the diced sweet potato with a drizzle of olive oil, season with salt and pepper, and roast for about 20 minutes until tender.
  2. While the sweet potato roasts, melt the butter in a saucepan. Stir in the flour and cook for 1 minute, whisking constantly.
  3. Gradually add the milk, whisking until the sauce thickens. Stir in garlic powder, then season with a pinch of salt and pepper.
  4. In a large bowl, combine the cooked pasta, chicken, roasted sweet potato, and the sauce. Mix everything until well coated.
  5. Transfer the mixture into a baking dish. Sprinkle mozzarella and parmesan cheese evenly over the top.
  6. Bake for 20-25 minutes, or until bubbly and golden brown on top.
