Heat olive oil in a large skillet over medium heat.
Add chicken pieces and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
In the same skillet, add sweet potatoes and cook for about 10 minutes until tender, stirring occasionally.
Add bell peppers, onion, and garlic. Cook until softened, about 5 minutes.
Return chicken to the skillet. Sprinkle with paprika, salt, and pepper. Stir to combine and heat everything through.
Garnish with chopped parsley if using. Serve hot.
