Ingredients

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season chicken with paprika, salt, and pepper. Add to the skillet and cook 6 to 7 minutes per side until golden and cooked through.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add onion and garlic. Cook for 2 minutes until fragrant.
  5. Add bell peppers, zucchini, and broccoli. Cook 5 to 7 minutes until just tender.
  6. Return chicken to skillet. Stir with vegetables and cook another 2 minutes.
  7. Serve hot, garnished with fresh parsley.
