Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
In a medium bowl, mix the blended cottage cheese, almond flour, maple syrup, egg, vanilla, cinnamon, and a pinch of salt.
Fold in the chopped apples. Try not to eat them straight out of the bowl. It’s tempting.
Scoop the batter into the mini muffin tin, filling each cup about 3/4 full.
Bake for 20–22 minutes until the edges are golden and the centers are set.
Cool before popping them out. They firm up a little as they rest.
