Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon instant coffee granules
  • 1 teaspoon ground cinnamon
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven (or air fryer) to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and instant coffee.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add in the egg and vanilla extract, mixing well.
  5. Slowly add the dry ingredients to the wet ingredients, stirring just until combined.
  6. Scoop dough by the tablespoon and place on a lined baking sheet or air fryer basket.
  7. Bake for 8–10 minutes, or until the edges are lightly golden. Let cool on a wire rack.
