Cinnamon Coffee Cookies – Sweet Easy Recipes for Cozy Days

I’ve got a thing for cookies that flirt with your coffee mug. These cinnamon coffee cookies? They’re the ones. Crispy on the outside, chewy in the middle, with just enough coffee flavor to make you go, ‘Hmm, did I just eat a cup of joe?’ You mix cinnamon and instant coffee granules into a soft, buttery dough, and magic happens. The smell that fills your kitchen? It’s part coffee shop, part grandma’s hugs. We’re talking real, ‘I-should-open-a-bakery’ vibes. They bake up with that dreamy crackled top and a scent that might make your neighbors jealous (or knock on your door). I love dunking them in an afternoon latte or sneaking one (okay, three) before bed. You’ve been warned—these go fast.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tablespoon instant coffee granules
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and powdered sugar together until smooth and fluffy.
  3. Add the instant coffee and vanilla. Mix until fully combined (and the smell hits you!).
  4. Stir in flour, cinnamon, and salt until a soft dough forms.
  5. Scoop tablespoon-sized portions, roll into balls, and place on the sheet.
  6. Flatten gently with the bottom of a glass. Bake for 10 minutes or until edges are lightly golden.
  7. Cool on the pan for 5 minutes, then transfer to a wire rack. Try not to eat them all at once.
