Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the butter and powdered sugar together until smooth and fluffy.
Add the instant coffee and vanilla. Mix until fully combined (and the smell hits you!).
Stir in flour, cinnamon, and salt until a soft dough forms.
Scoop tablespoon-sized portions, roll into balls, and place on the sheet.
Flatten gently with the bottom of a glass. Bake for 10 minutes or until edges are lightly golden.
Cool on the pan for 5 minutes, then transfer to a wire rack. Try not to eat them all at once.
