Brown the ground beef in a skillet over medium heat until no longer pink. Drain excess fat.
Place the beef into your crockpot and add the carrots, potatoes, celery, onion, and garlic.
Pour in the beef broth and diced tomatoes. Stir everything together.
Season with salt, pepper, thyme, and parsley.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until vegetables are tender.
Stir before serving and taste to adjust seasonings as needed.
