Ingredients

  • 1 lb smoked sausage, sliced
  • 1 cup long grain rice, uncooked
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage slices and cook until browned.
  2. Add onion, bell pepper, and garlic. Cook until softened and fragrant.
  3. Stir in the Cajun seasoning, uncooked rice, diced tomatoes, and chicken broth.
  4. Bring the mixture to a simmer, then reduce heat to low. Cover and cook until rice is tender, about 20 minutes.
  5. Check seasoning, add salt and pepper as needed. Fluff the rice and garnish with parsley before serving.
