Stir in the Cajun seasoning, uncooked rice, diced tomatoes, and chicken broth.
Bring the mixture to a simmer, then reduce heat to low. Cover and cook until rice is tender, about 20 minutes.
Check seasoning, add salt and pepper as needed. Fluff the rice and garnish with parsley before serving.
