Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, cut into cubes
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 3 cups chicken broth
  • 1 1/2 cups honey bbq sauce
  • 1 pound penne pasta
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large deep skillet over medium heat.
  2. Season the chicken with smoked paprika, salt, and pepper. Cook until browned on all sides.
  3. Pour in the chicken broth and honey bbq sauce. Stir well.
  4. Add the uncooked penne pasta and push it down so it’s mostly submerged.
  5. Bring to a boil, then lower to a simmer. Cover and cook for 15 minutes, stirring occasionally, until the pasta is tender.
  6. Remove the lid, sprinkle with mozzarella cheese, and let it melt into the pasta.
  7. Top with chopped parsley and serve hot straight from the pan.
