Slice the chicken breasts in half horizontally to create thin cutlets.
In a bowl, mix pickle juice, olive oil, garlic powder, paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes.
Preheat your grill (or air fryer if you're feeling fancy).
Grill the chicken for about 3-4 minutes per side until fully cooked and nicely charred.
During the last minute of cooking, place a slice of cheese on each piece to melt.
Assemble the sandwich: spread mayo on buns, then layer lettuce, tomato, cheesy grilled chicken, and bacon.
