Preheat oven to 400°F and lightly grease a baking sheet with spray or oil.
Grate zucchini and squeeze out excess moisture with a clean kitchen towel.
In a large bowl, combine zucchini, egg, breadcrumbs, cheddar, Parmesan, garlic powder, onion powder, salt, and pepper.
Scoop small spoonfuls of the mixture and shape into little tots with your hands.
Arrange tots on the baking sheet and bake for 18–22 minutes, flipping halfway through, until golden brown and crispy.
Serve warm with your favorite dipping sauce.
