Preheat your air fryer to 400°F. This gives the chops that beautiful crust right from the start.
In a shallow bowl, whisk the eggs. In another, mix panko, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
Dip each pork chop in the egg, then press into the breadcrumb mixture. Make sure they’re fully coated — this is the magic step.
Spray both sides of the chops with olive oil spray and place them in the air fryer basket. Don’t crowd them.
Air fry for 10 to 12 minutes, flipping halfway through. They should be golden and crisp, with an internal temp of 145°F.
Let them rest a few minutes before serving. That keeps the juices where they belong — inside.
