Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a shallow dish, mix Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
Pat the pork chops dry. Rub them lightly with olive oil on both sides.
Dredge each pork chop in the breadcrumb mixture, pressing to coat well.
Place the pork chops on the baking sheet and drizzle or spray with a little more olive oil.
Bake for 25–30 minutes, flipping halfway through, until golden brown and cooked through (internal temp of 145°F).
For extra crispiness, broil for the last 2–3 minutes.
