Ingredients

  • 2–3 boneless, skinless chicken breasts
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 (14.5-ounce) can diced tomatoes
  • ½ cup chicken broth
  • 1 (8-ounce) block cream cheese, cubed
  • ½ cup grated parmesan cheese
  • 8 ounces penne pasta (or any pasta you love)
  • Fresh parsley for garnish (optional)

Instructions

  1. Place chicken breasts into the crock pot and season with Italian seasoning, garlic powder, salt, and pepper.
  2. Add diced tomatoes and chicken broth over the chicken. Give it a gentle stir.
  3. Top with cubed cream cheese and parmesan cheese—no need to stir it in yet.
  4. Cover and cook on low for 4 hours or until chicken is tender and fully cooked.
  5. Once cooked, shred the chicken with two forks directly in the crock pot.
  6. Cook pasta according to package instructions. Drain and add it to the crock pot.
  7. Stir everything together until the sauce is creamy and coats the pasta evenly.
