Ingredients

  • 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (15 ounces) tomato sauce
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked basmati rice, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté onions until soft and golden.
  2. Add garlic and ginger, cooking for another minute until fragrant.
  3. Transfer the onion mixture to the crockpot. Add chicken, tomato sauce, cream, butter, and all the spices. Stir to combine.
  4. Cover and cook on low for 6 hours or on high for 3 hours until the chicken is tender.
  5. Taste and adjust seasoning with salt and pepper as needed.
  6. Serve hot over rice and garnish with fresh cilantro.
