Ingredients

  • 8 oz elbow macaroni, cooked and cooled
  • 6 hard-boiled eggs, peeled and chopped
  • 1/2 cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp paprika (plus more for garnish)
  • 1/4 tsp garlic powder
  • Salt and black pepper, to taste
  • 2 tbsp chopped dill pickles or relish (optional)
  • 1/4 cup chopped green onions

Instructions

  1. Boil the macaroni according to the package instructions. Drain and rinse under cold water to stop the cooking. Let it cool.
  2. In a large mixing bowl, stir together mayonnaise, mustard, vinegar, paprika, garlic powder, salt, and pepper.
  3. Add the chopped eggs, cooked pasta, pickles (if using), and green onions to the bowl.
  4. Fold everything together gently until well combined and evenly coated.
  5. Taste test—this part is important. Add more salt, mustard, or paprika if your soul tells you to.
  6. Cover and chill in the fridge for at least 30 minutes before serving. It gets better as it sits.
