Preheat oven to 400°F (200°C).
Season both sides of the pork chops with salt, pepper, smoked paprika, and garlic.
Heat olive oil in an oven-safe skillet over medium-high heat.
Add pork chops and sear for 2-3 minutes on each side until golden brown.
Sprinkle brown sugar evenly over the top of the pork chops.
Add butter to the pan and transfer the skillet to the oven.
Bake for 8-10 minutes or until internal temperature reaches 145°F (63°C).
Spoon pan sauce over the chops and garnish with fresh herbs before serving.
