Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (10 oz) red enchilada sauce
  • 8 medium flour or corn tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 350°F. Lightly grease a 9x13 baking dish.
  2. In a large skillet over medium heat, cook the ground beef and onion until beef is browned and onion is soft. Drain excess fat.
  3. Add garlic and taco seasoning, stir for about 1 minute until fragrant.
  4. Pour in half of the enchilada sauce, stir to combine, and remove from heat.
  5. Spread a thin layer of the remaining sauce on the bottom of the baking dish.
  6. Spoon beef mixture into each tortilla, sprinkle with cheese, roll up, and place seam-side down in the dish.
  7. Pour remaining sauce over the enchiladas, sprinkle with the rest of the cheese.
  8. Bake for 20 minutes or until cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving, if desired.
