In a small bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper.
Place pork chops in a shallow dish or zip-top bag. Pour marinade over them and let sit for at least 15 minutes (or overnight if you’re a planner).
Heat a large skillet over medium-high heat. Add pork chops and sear for 3–4 minutes on each side until golden brown.
Pour remaining marinade into the skillet and cook until the sauce thickens slightly and the pork chops reach 145°F internally.
Garnish with green onions and sesame seeds before serving.
