Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 packet taco seasoning
  • 1 cup uncooked white rice
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 cup chunky salsa
  • 2 1/2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • Optional toppings: diced avocado, chopped cilantro, lime wedges, sour cream

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and taco seasoning. Cook until chicken is browned, about 5–6 minutes.
  3. Stir in uncooked rice, black beans, corn, salsa, and chicken broth. Mix well.
  4. Bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes or until the rice is tender and liquid is absorbed.
  5. Sprinkle shredded cheese over the top and let it melt before serving.
  6. Top with your favorite toppings and enjoy!
