Ingredients

  • 2 chicken breasts, cooked and chopped
  • 2 cups cooked white rice
  • 1 can (15 oz) corn, drained
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/2 cup crumbled cotija or feta cheese
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

  1. In a medium bowl, combine the corn, mayonnaise, sour cream, chili powder, paprika, garlic powder, lime juice, and half the cheese. Mix well and season with salt and pepper.
  2. Warm the chopped cooked chicken if needed and season lightly with salt and pepper.
  3. To assemble the bowls, divide the rice into serving bowls.
  4. Top each bowl with chicken, a generous scoop of the street corn mixture, and the remaining cheese.
  5. Garnish with fresh cilantro and serve with lime wedges if desired.
