Preheat your oven to 325°F (163°C). Grease a 9x13-inch baking pan or a bundt pan with butter or nonstick spray.
In a large mixing bowl, whisk together the sugar, oil, eggs, and vanilla until smooth.
Fold in the diced apples—don’t worry if the batter looks thick.
In a separate bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg.
Add the dry ingredients to the wet ingredients and mix just until combined. If you’re using nuts, stir them in now.
Pour the batter into your prepared pan and smooth the top with a spatula.
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
Let it cool in the pan for 15 minutes before turning out or slicing to serve.
