Fresh Apple Cake – Banana Dessert Recipes Easy and Deliciously Moist

This fresh apple cake isn’t just good—it’s the kind of good that makes you cut a second slice before you even finish the first. It’s got this deeply comforting, spiced apple flavor that feels like autumn baked right into a pan. We’re not getting fancy here—just the kind of cozy, no-fuss dessert that reminds me of home. I remember the first time I made this cake. I was trying to use up a few apples sitting on the counter a little too long. You know, the kind that are a bit past their snacking prime. But once they’re folded into a cinnamon-laced batter and baked until golden? Magic. Suddenly, those apples are the star of the show. Whether you’re making this for a potluck, a quiet weekend at home, or just to make your kitchen smell amazing, this apple cake delivers. And it keeps beautifully—if you can manage not to eat it all in one go.

Ingredients

  • 2 cups sugar
  • 1½ cups neutral oil (like canola or vegetable)
  • 3 eggs
  • 2 tsp vanilla extract
  • 3 cups diced apples (peeled, any variety)
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9x13-inch baking pan or a bundt pan with butter or nonstick spray.
  2. In a large mixing bowl, whisk together the sugar, oil, eggs, and vanilla until smooth.
  3. Fold in the diced apples—don’t worry if the batter looks thick.
  4. In a separate bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Add the dry ingredients to the wet ingredients and mix just until combined. If you’re using nuts, stir them in now.
  6. Pour the batter into your prepared pan and smooth the top with a spatula.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 15 minutes before turning out or slicing to serve.
