Fudgy Chewy Brookies for Cookie-Brownie Lovers

Ever tried choosing between a brownie and a cookie and felt like you were betraying one dessert for the other? That’s exactly the emotional crisis I found myself in before I met brookies—the magical mashup of both. These fudgy chewy brookies are what happens when brownies and cookies stop fighting and just hug it out in your oven. We’re talking crispy edges, gooey centers, and swirls of chocolate so rich you’ll wonder if you’ve accidentally baked yourself into dessert royalty. I make these brookies when I'm short on time but big on cravings. The smell alone brings my family into the kitchen faster than I can say, 'Don’t eat that, it’s still hot!' And if you’ve got an air fryer, guess what? We’ve got tips for that too. From air fryer cookies easy recipes to sweet easy recipes that are simple enough for a weekday sugar fix, these brookies tick every box. Perfect for picnics, parties, or those Tuesday nights when only chocolate can fix things, they’re a dessert you’ll actually want to share. Or not. I won’t tell.

  2. Whisk the melted butter and brown sugar together until smooth.
  3. Add in the egg and vanilla, stirring until fully combined.
  4. Mix the flour, baking powder, and salt in a separate bowl, then fold it into the wet ingredients.

  6. Scoop the dough into the pan, spreading it evenly.
