Pat the chicken dry with paper towels and toss it with Italian seasoning, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken pieces in a single layer, and cook undisturbed for 3-4 minutes until golden.
Flip the chicken and cook the other side for another 3-4 minutes.
Add butter and minced garlic to the skillet. Stir and cook for 2 minutes, until the garlic is fragrant and the chicken is fully cooked.
Sprinkle with chopped parsley if using, then serve hot.
