Ingredients

  • 2 large chicken breasts, boneless and skinless
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, minced garlic, oregano, basil, paprika, salt, and pepper.
  3. Toss the chicken breasts and baby potatoes in the seasoning mixture until well coated.
  4. Place everything on a lined baking sheet, spreading evenly.
  5. Sprinkle grated Parmesan cheese over the top.
  6. Bake for 25-30 minutes until the chicken is fully cooked and the potatoes are crispy.
  7. Garnish with fresh parsley and serve warm.
