Ingredients

  • 4 boneless skinless chicken breasts
  • 1 ½ pounds baby potatoes, halved
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Spray the inside of your crockpot with nonstick spray or lightly oil it.
  2. Place the halved potatoes at the bottom of the crockpot.
  3. Season the chicken with salt, pepper, and Italian seasoning, then lay the chicken breasts over the potatoes.
  4. Mix melted butter, minced garlic, and parmesan cheese in a small bowl. Pour the mixture over the chicken and potatoes.
  5. Cover with the lid and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender and cooked through.
  6. Sprinkle with fresh parsley before serving. Spoon plenty of the garlic parmesan sauce over each portion.
