  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup frozen peas (optional)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until it begins to brown, breaking it up with a spoon.
  3. Toss in chopped onion and minced garlic. Cook until the onion softens—about 3–4 minutes.
  4. Stir in paprika, oregano, salt, and black pepper. Let the flavors mingle.
  5. Pour in the uncooked rice, beef broth, and diced tomatoes. Give it a good stir.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is cooked through.
  7. If using, stir in frozen peas and cheese. Cover for 2–3 minutes until heated through and melty.
  8. Serve hot—preferably with something cold to drink.
