Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 medium russet potatoes, diced small
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup water or low-sodium broth
  • Fresh parsley or green onion for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook until no longer pink, breaking it up with a spatula.
  2. Add the diced onion, garlic, and bell pepper. Cook for 3–4 minutes until softened and fragrant.
  3. Toss in the diced potatoes, paprika, oregano, salt, and pepper. Stir everything to coat.
  4. Pour in the water or broth, cover the skillet, and lower the heat slightly. Let it simmer for 12–15 minutes or until the potatoes are fork-tender.
  5. Uncover the skillet and let any excess liquid cook off for another 2–3 minutes. Stir occasionally so nothing sticks.
  6. Garnish with parsley or green onion if you're feeling fancy. Serve warm!
