Ingredients

  • 1 cucumber, sliced into thick rounds
  • 1 red bell pepper, cut into small cubes
  • 1 yellow bell pepper, cut into small cubes
  • 1 cup cherry tomatoes, halved
  • 1 cup hummus (store-bought or homemade)
  • Fresh parsley or cilantro for garnish
  • Salt and black pepper to taste

Instructions

  1. Scoop a small hollow in the center of each cucumber slice to form a little cup.
