Ingredients

  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • Pinch garlic powder optional
  • Pinch paprika optional
  • Pinch cayenne optional

Instructions

  1. Preheat oven to 400 F. Line a baking sheet with parchment paper.
  2. Blend the cottage cheese until smooth.
  3. Stir in Parmesan and egg until the mixture looks thick and even.
  4. Spread the mixture on the sheet to about one quarter inch thick.
  5. Score into fry shapes. Add a little Parmesan on top if you like.
  6. Bake for 20 to 25 minutes until edges turn deep gold and the sheet feels set.
  7. Cool for a few minutes. Cut along the score lines and serve warm.
