Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly coat it with cooking spray.
In one bowl, whisk the eggs. In another, mix the breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper.
Dip each chicken strip into the egg, then coat it in the breadcrumb mixture, pressing lightly to help it stick.
Place the coated chicken on the baking sheet in a single layer. Give them a quick spray of cooking oil for extra crispiness.
Bake for 18–20 minutes, flipping halfway through, until golden and cooked through.
