Pound the chicken breasts to even thickness, then season both sides with salt and pepper.
Dredge each chicken breast lightly in flour, shaking off any excess.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes on each side, until golden and cooked through. Remove from skillet and set aside.
In the same skillet, reduce heat to medium. Melt butter and sauté the minced garlic for 1 minute until fragrant.
Stir in honey, apple cider vinegar, and soy sauce. Let it simmer for 2-3 minutes until slightly thickened.
Return the chicken to the skillet and spoon the sauce over each breast. Cook for another 2 minutes to coat well.
Garnish with chopped parsley and serve immediately.
