Ingredients

  • 12 oz chicken sausage links, sliced into ½-inch rounds
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili flakes (optional)

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment.
  2. Toss diced sweet potatoes with olive oil, salt, and pepper, then spread them out on the baking sheet.
  3. Roast sweet potatoes for 20–25 minutes, flipping halfway through, until golden and tender.
  4. While the potatoes roast, sear chicken sausage slices in a skillet over medium heat until browned, about 5–7 minutes. Set aside.
  5. In the same skillet, stir together honey, garlic, soy sauce, smoked paprika, and chili flakes. Simmer for 2–3 minutes until slightly thickened.
  6. Add sausage back to the skillet and toss to coat in the sauce.
  7. When sweet potatoes are ready, pile them into bowls and top with the glazed sausage. Spoon extra sauce over everything and serve hot.
