Season the pork chops with salt and black pepper on both sides.
Heat oil in a skillet over medium-high heat. Add the pork chops and cook for 3 to 4 minutes on each side, until golden brown and cooked through. Remove and set aside.
In the same skillet, sauté the garlic until fragrant (about 30 seconds).
Add honey, soy sauce, water, and apple cider vinegar. Stir well and let the sauce simmer for 1 to 2 minutes until slightly thickened.
Return the pork chops to the skillet, coating them in the sauce. Cook for another 1 to 2 minutes to absorb the flavor.
Serve hot with extra sauce spooned over the top.
