Preheat oven to 425°F (220°C). Line a baking pan with foil and lightly grease it.
In a small bowl, whisk together honey, soy sauce, olive oil, garlic, ginger, and rice vinegar.
Place chicken thighs in a large bowl, pour the honey soy mixture over, and toss to coat evenly.
Arrange the chicken thighs on the prepared pan, smooth side down. Spoon any extra sauce over them.
Bake for 25–30 minutes or until the chicken is cooked through and slightly caramelized on top.
Spoon the pan juices over the chicken before serving, then sprinkle with green onions and sesame seeds.
