Preheat your grill to medium-high heat. Give it a good 10–15 minutes to really heat up.
While the grill heats, rub each chicken breast with olive oil, then season both sides with salt and pepper.
Place the chicken on the grill and cook with the lid closed for about 5–6 minutes per side. Avoid flipping too much—you want nice grill marks and even cooking.
Check for doneness: the internal temp should hit 160°F before saucing. No guessing—grab that thermometer!
Brush the chicken with BBQ sauce on one side, flip, brush the other side, and grill for another 2 minutes each side.
Once the sauce is caramelized and the chicken reaches 165°F internally, pull it off the heat and let it rest for 5 minutes before serving.
