Ingredients

  • 2 cups cottage cheese
  • 1 medium zucchini, sliced
  • 1 red bell pepper, diced
  • 1 cup baby spinach
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup shredded mozzarella
  • 2 eggs, beaten
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a little olive oil in a skillet. Sauté the onion and garlic until softened.
  3. Add zucchini and bell pepper. Cook until they start to soften.
  4. Stir in spinach and cook just until wilted.
  5. In a mixing bowl, combine cottage cheese, eggs, oregano, paprika, salt, and pepper.
  6. Mix the sautéed vegetables into the cottage cheese mixture.
  7. Pour everything into a greased baking dish and sprinkle with mozzarella on top.
  8. Bake for 30–35 minutes until golden and set.
  9. Let it rest for 5 minutes before serving.
