Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Chopped parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pound chicken breasts to even thickness.
  3. Set up three bowls: one with flour, salt, and pepper; one with beaten eggs; and one with Parmesan cheese and breadcrumbs mixed together.
  4. Dredge each chicken breast in flour, dip into the eggs, and coat in the Parmesan breadcrumb mixture.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
  6. Transfer skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through.
  7. In a separate saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  8. Pour in heavy cream and chicken broth. Add Italian seasoning and red pepper flakes.
  9. Simmer sauce for 5-7 minutes, stirring occasionally until slightly thickened.
  10. Serve chicken with creamy garlic sauce spooned on top. Garnish with chopped parsley.
